1 tsp Kosher salt
1 tsp Fresh cracked black pepper
2 tbsp neutral oil (avocado or canola)
2 tbsp butter
2 garlic cloves (smashed)
2 sprigs fresh thyme or rosemary (optional)

Salt steaks generously on all sides. Let rest at room temp for 30ā60 min.

Preheat oven to 250°F (120°C).

Place steaks on wire rack over a baking sheet.

Roast until internal temp hits 115°F for medium-rare (about 30 min).

Heat cast iron skillet until smoking hot. Add oil.

Sear steaks 1 min per side, then quickly sear edges.

Add butter, garlic, and herbs. Baste steaks for 30 seconds.

Let rest 5ā10 min before slicing or serving.
