 2 center-cut filet mignon steaks (1.5–2" thick)
 1 tsp Kosher salt
 1 tsp Fresh cracked black pepper
 2 tbsp neutral oil (avocado or canola)
 2 tbsp butter
 2 garlic cloves (smashed)
 2 sprigs fresh thyme or rosemary (optional)

Salt steaks generously on all sides. Let rest at room temp for 30–60 min.

Preheat oven to 250°F (120°C).

Place steaks on wire rack over a baking sheet.

Roast until internal temp hits 115°F for medium-rare (about 30 min).

Heat cast iron skillet until smoking hot. Add oil.
